Mediterranean Spiced Marinated Gordal Olives
50 green Gordal olives
3 tbsp extra virgin olive oil
1 tsp ground coriander seeds
1 tsp curry powder
1 tbsp fresh ginger, peeled and chopped
3 tbsp honey
Grated zest of 1 lemon
2 tbsp lemon juice
2 tbsp chopped flat-leaf parsley
2 tbsp chopped fresh coriander
Sea salt to taste
Fresh ground pepper to taste
In a large bowl, combine the Spanish olives with the extra virgin olive oil.
Add the rest of the ingredients and mix well.
Cover tightly and refrigerate for 8 hours. Bring to room temperature before serving.
