Manzanilla Olive, Caramelized Onion, Artichoke, and Goat Cheese Spread
⅓ cup (80 mL) stuffed Manzanilla olives, chopped
1 onion, chopped
2 tbsp (30 mL) butter
⅓ cup (80 mL) marinated artichokes, drained and chopped
½ clove garlic, finely chopped
2 tbsp (30 mL) chopped chives
2 tbsp (30 mL) chopped dill
1 cup (250 mL) fresh goat cheese
½ cup (125 mL) cream cheese
In a pan over medium/low heat, cook onion in butter, stirring occasionally, for 8-10 minutes until caramelized.
In a bowl, mix onions with all other ingredients in the recipe. Serve with crackers of your choice.
