Chunky Dip with Manzanilla Olives

Chunky Dip with Manzanilla Olives from Spain

 1 ½ cups pimiento-stuffed green Manzanilla olives
 1 red bell pepper or pimiento pepper
 ¾ cup cherry tomatoes
 1 green onion
 1 tbsp capers, drained
 2 tbsp extra virgin olive oil
 1 tsp fresh rosemary
 2 tbsp fresh parsley, chopped
 Salt and pepper to taste
 Choice of tortilla chips or crackers

Chop all the ingredients and combine them in a large bowl.


Add the extra virgin olive oil, fresh herbs and salt and pepper to taste. Mix together well.


Serve with tortilla chips or crackers. Enjoy!
